Green, lean and packed with energy!

This is one of my favorite ways to start the day – keeps my mind clear and gives me great motivation and energy!

I have a Jack Lalane juicer, but I’ve never quite mastered the whole juicing thing. It’s messy, time consuming and typically not worth the hassle, but I love starting my day with a healthy juice or smoothie.  So while I wish I could be like so many of you out there who wake up daily and juice your way to a clear day, I just can’t seem to be that girl. But I can be the girl who pops into the local Juiceland or Juicebox and let them help me start my day in a healthy way!

For those days when I’m more motivated or have more time, I whip up this quick and simple green juice smoothie and head off for my day with a healthy immune booster.  There are tons of variations to a green juice/smoothie, but this is a favorite of mine.

Green breakfast smoothie

Green breakfast smoothie

Ingredients

  • handful of greens: spinach, kale, chard or other
  • ½ cup of your favorite frozen or fresh organic fruits
  • ½ – 1 avocado
  • 1-2 cups of almond or coconut milk, OJ and/or water
  • 1 tablespoon ground flax seed or flax oil (flax oil tends to be less gritty)
  • 1 tablespoon coconut oil (melted)
  • 1 small grated knuckle of ginger, peeled

Instructions

  1. Blend all ingredients together in your favorite mixer and enjoy!
  2. Note: I like to start with the greens and liquid of choice first to make sure they are properly blended before I add all other ingredients.
  3. My other favorite version: use bananas & strawberries as your fruit and substitute ¼ cup of almond butter or Sunbutter in place of the avocado.

This is a delicious alkalizing green smoothie recipe that I have almost daily; it’s a great way to help balance your PH levels and with the Omega 3 benefits from the flax oil and natural b vitamins from the berries, it’s a perfect way to start your day!  Strawberries are not only nature’s way of giving us a sweet treat, but they are also packed with helpful nutrients. They are an excellent source of vitamin C and manganese, are a very good source of dietary fiber and iodine, potassium, folate, riboflavin, vitamin B5, omega-3 fatty acids, vitamin B6, vitamin K, magnesium, and copper. 

For those of you who are new to kale, it can often have a slight bitter taste and I like this recipe because the sweetness from the berries helps counteract that. If you choose to use a protein powder, opt for a grain and dairy free version  that’s flavored with stevia ideally. I prefer Wheatgrass which is naturally gluten free and sprouted.

Ingredients

  • 1-2 handfuls baby greens
  • 3 medium Kale leaves
  • 5-8 fresh mint leaves
  • 1″ piece fresh ginger, peeled
  • 1 avocado
  • handful strawberries
  • 12 oz coconut water
  • fresh juice of one lime
  • 1-2 TBSP flax oil

Instructions

  1. Add coconut water and protein to your Vitamix or blender
  2. Add the rest of the ingredients
  3. Blend on high for 30-60 seconds until all greens have combined and texture is smooth
  4. Enjoy!

Ingredients

  • 2 pints cut up pineapple
  • 2 pints cut up watermelon
  • 2 quarts coconut water
  • 1 bag baby spinach
  • 1 bag frozen blueberries
  • 2 green apples or 2 bananas

Instructions

  1. Blend all of the ingredients together in a juicer, pour into 16 oz. servings.
  2. You can store or freeze extra smoothies to drink later.
  3. Enjoy!

Today I used the first cucumber from our garden – yay for growing our own veggies! While it was a tiny little thing, I was so proud of it and wanted to use it in a smoothie as I was craving something light and tasty (and something other than a salad, which tends to be my go-to food). So I did a quick search on some of my fave sites, and ran across What Gaby’s Cooking. She had some fun with cucumbers and pineapples recently and posted this delish, healthy and super simple smoothie so I gave it a shot. LOVED IT!

Cucumber Pineapple Smoothie

Ingredients

  • 1 cup freshly cut pineapple
  • 1/2 cup fresh raspberries
  • 1-2 leaves of kale (any kind of kale will work)
  • 1/2 English cucumber, peeled and roughly chopped
  • ice
  • water

Instructions

  1. Combine everything into your blender with 3-4 ice cubes and a touch of water. Blend.
  2. Add more water if needed to get things moving around in the blender.
  3. Drink up!
