raw green juice

Inflammation is a bitch. It causes joint pain, aches, fatigue, headaches and can make doing just about any normal daily function near impossible. Since I have Hashimoto’s, which is an auto-immune condition that causes my body to attack the thyroid, I’m pretty aware of how inflammation can take a person down. And how there is often little or no warning that it’s coming on.

So I try to keep inflammation at bay by focusing on healthy, nutritious foods that are naturally anti-inflammatory. Like green juice. One of my staples is a juice that’s packed with nutrition for your thyroid, helps reduce inflammation and can help you detox.

I have friends that love juicing, and some that would rather suffer than drink it. This version is pretty hard-core, so it’s not for those of you who prefer your juice a’la dessert. If you do, you can always add a green apple to sweeten it up. I won’t judge.

Ingredients    

1 cup mixed baby greens (spinach works too)
2 large carrots (peeled)
1 ripe avocado
1 stick of celery
1 cucumber
1 bunch of basil leaves
1 cup coconut milk
1 scoop Pea Protein
Sea salt

Note: Coconut milk is hypoallergenic and can help reduce inflammation and stabilize blood sugar due to its (good) fat content.

Optional Boosts
(1 tablespoon each)

Camu powder- to boost vitamin C
Cod Liver Oil- anti-inflammatory (can also sub Flax oil)
Coconut kefir – probiotics (or any probiotic, in a pinch)
Maca root powder – helps increase body temp and stabilize hormones
Turmeric powder- anti-inflammatory

Directions

Blend together in Vitamix or other blender and enjoy as low glycemic breakfast, lunch or snack!
