Allergy free travels
Good food, Good travels. Great life!
After a much needed break from life spent in sunny, beautiful, and relaxing Cozumel, I returned with a clear mind and renewed focus for helping everyone find safe, healthy and delicious allergy-free foods! While in Mexico I was happy to learn that the term “gluten” has made its way across the ocean to our friends in Mexico, and found many of the restaurants able and willing to accomodate a special diet. How wonderful to have the confidence to travel without worries for health setbacks, and to know that I could truly relax and enjoy my trip without worrying of accidentally eating something that would cast a shadow across the rest of our trip. Of course, I was worried about not only a language barrier (I speak “Un poquito Espanol”) but I was also concerned about whether the term “gluten” was something that was would translate? So I initially asked if the food was made with “flour” or “breaded” and then mentioned that I’m allergic to flour and bread. And that seemed to work just fine, and I’m happy to say I spent a week out of my element, and loved the foods native to Mexico. We ate tons of fresh, grilled fish, fruits and veggies and enjoyed some yummy margaritas (when in Mexico!).
And the best news yet is that I came back without heartburn, tummy aches, or any other signs of eating something that was cross contaminated which was a huge surprise! I expected to be suffering for a few days after returning, so I’m hoping its both a sign of my personal progress (thanks to the Paleo diet) and the increased awareness of the true epidemic of food allergies and sensitivities.
So as I pick back up where I left off and share some new recipes and health updates with you, I leave you with a picture from our trip that sums up my new health and life philosophy thanks to our amazing boutique hotel in Cozumel (Hotel B Cozumel): Just Be!
Hi, I'm Jen, and I launched InspiredEats after being diagnosed with several food allergies, and battling auto-immune conditions including Hashimotos, Adrenal Fatigue, Pyroluria and vitamin deficiencies. I have overcome most all conditions by following the Paleo Diet. My hope is to help so many others like me who are suffering and don't understand how to heal. That's the meaning behind my message: Eat.Heal.Thrive.
