I know many people who have a hard time eating breakfast in the morning, and though I’ve never ben one of those people, I understand why it’s hard to imagine eating a full meal first thing. So, as I changed up my daily breakfast routine today I thought it might be a good option for those of you who have trouble eating a hearty breakfast before heading off to work.
Today I decided to combine one of my favorite juices with a protein packed egg-white punch in lieue of my standard egg white omelet. Typically I use a 5 egg white omelet with some sautéed kale, peppers and mushrooms to help give me more than 20 grams of protein to start my day, but today I chose to drink my protein instead. Starting off with my favorite juicer, I threw in 8 baby carrots and 3 small apples to create a juice base, then tossed that into the blender with 2 bunches of kale, an inch wide chunk of ginger (unpeeled), added some chopped up ice, a cup of coconut water and threw in a scoop of my favorite protein powder (egg white based as I avoid grains and dairy) and whipped up a delicious, frothy breakfast packed with 30 grams of protein, plenty of fiber and heart healthy fruit.
- 8 Baby Carrots (beta-carotene, vitamin A)
- 3 Small Apples (antioxidants, fiber)
- 1 small piece of Ginger (about 1″) (anti- inflammatory)
- 2 bunches of Kale (beta carotene, lutein, calcium)
- 1 Scoop Protein Powder of choice
- 8 ounces Coconut Water
