The expert panel noted the lack of a national federation working together to advance education, research and to advocate on behalf of individuals with the disease. Several speakers highlighted the work of the American Celiac Task Force (the predecessor to the ACDA) which was spearheading a grassroots effort to improve the nation’s food labeling laws. The Food Allergen Labeling and Consumer Protection Act was signed into law on August 3, 2004, easing much of the guesswork in food shopping for those with celiac disease and food allergies. In my 20’s I studied ayurvedic cooking. When my son and I were diagnosed with celiac disease, this three-year study came in handy. Celiac disease is an inherited autoimmune disorder triggered by eating gluten. Out of necessity my cooking took on an entirely new dimension as we both went on a gluten-free diet. While my cooking might not be complex, I appreciate that my food brings people together –those who eat regular food and those who can’t –to break bread in the warmth of my kitchen. I love to make food that is not only good for you, but actually tastes good. This has become a passion for me. This passion has recently led me from blog to book with the publication of The Gluten-Free Almond Flour Cookbook. My cookbook, published by Random House (July 2009), features over 100 gluten-free recipes.

I am a stay at home, homeschooling mother of two. Although I consider myself a serious home cook, going gluten free in the fall of 2009 has proved to be quite the culinary challenge. I have a toddler who has had very strange symptoms since she began eating foods and it wasn’t until my husband was diagnosed with Celiac that we realized gluten was her problem as well.We made the decision to be a gluten free family because I don’t want to cook separate meals for half the family and let’s face it, a 2 year old hardly understands why she can’t have what others are eating. So, I am finding myself cooking and eating gluten free.
